LAUGHLIN — Earning the fourth Best Food title doesn’t come easy and requires planning, care and teamwork. The Colorado Belle/Edgewater won Best Food at the 30th annual Chef’s Food Fest June 8 along with Best Cocktail.
The Chef’s Food Fest featured the Flavors of the Desert theme and incorporated a new element — a secret ingredient. Additional winners were the Aquarius for Best Booth and Best Dessert and Harrah’s Laughlin won Best Use of the Secret Ingredient.
Taking the top spot though takes a lot of work. Chef Dewayne Rose said the Colorado Belle/Edgewater has won Best Food four times in the last eight years he’s been part of it. The key for he and his staff to winning is the amount of pride they have but also paying attention to details. A lot of planning went into deciding the menu including getting down to the nitty gritty of knowing how many staff members would be at the event, who would set up, break down, put the food away, what uniforms they’d wear and more, he continued.
It is also a bit more simple than it seems. Rose said his approach is to use the Chef’s Food Fest as a means of show casing what The Hickory Pit has to offer, but it could be any of the restaurants or beverage sellers in the casinos. The idea is to ensure the community knows what is available to them and so it becomes important that the best foot is put forward, he added.
For the food fest, it took about two weeks of planning and having several meetings with several departments to get all the details determined, Rose said.
