Baleen Kitchen at the Portofino Hotel, overlooking the Redondo Beach Marina, recently opened its doors after a nearly eight-month renovation.
The Redondo Beach restaurant underwent a complete renovation and redesign, while dedicating the menu to local sourced “California influenced cuisine,” according to general manager Fellippe Estevez.
“(Baleen has) a new coastal look and feel, more inviting,” Estevez said.
Executive Chef Leandro Bongarra, who had worked with Estevez at Stefan’s at L.A. Farm, was hired work on the new menu and has definitely put his stamp on it.
The new menu also carries over some favorites and highlights dishes chosen by the corporate chef of Noble House Hotels and Resorts, which owns Baleen.
Some of the signature dishes include the lobster mac and cheese, ahi tuna taco, sauteed snapper and the King Harbor Benedict on the breakfast and brunch menu.
Bongarra said they had the “smoothest opening” he’s ever seen when Baleen reopened two weeks ago.
“The goal is have the customer have the best experience possible,” Bongarra said.
Many of the signature cocktails are inspired by Redondo Beach locations. Four beers on tap, including the Cannonball Run IPA, which is brewed by Absolution Brewing Company in Torrance for Baleen, are available. There are also nearly 40 California wines on the menu.
